Chef Jay Ducote developed this Asian Flair Fish recipe with fresh-caught Black Drum, straight from the waters of Louisiana.
Ingredients
4-5 lbs black drum filets, cut into serving-size portions
2 limes, divided
1 jalapeno, small diced
1 knuckle fresh ginger, grated
6 cloves garlic, minced
1 bunch cilantro, chopped, divided
2 tablespoons Hoisin Sauce
1 tablespoon Fish Sauce
1 tablespoon Soy Sauce
Kosher salt
Black pepper
Instructions
In a medium-sized bowl, add juice from one lime, jalapeno, ginger, garlic, half the cilantro, hoisin sauce, fish sauce, and soy sauce. Whisk to combine.
Pour mixture over fish in a zip-top bag, seal, and place in the refrigerator for at least half an hour.
Remove the fish filets from the marinade and season with salt and pepper.
Heat a cast iron skillet over medium heat. Sear the fish on the cast iron for a few minutes per side, until the fish is cooked through. Serve hot, garnished with lime juice and cilantro.
