Abita Beer Battered Fish

Ingredients

  • 4 lb Sheepshead filets
  • 1 bag tempura batter mix
  • 2 cans Abita Beer (Beeracuda, Amber, etc.)
  • Frying Oil

Instructions

  1. Heat oil to 350F in a Bayou Classic deep fryer. 
  2. Follow instructions on tempura batter mix, using cold beer in place of water. 
  3. Whisk until smooth. 
  4. Dip fish into wet batter, then carefully lower it into hot oil. 
  5. Fry until golden brown, about 2 minutes. 
  6. Remove from grease and place on a draining rack or paper towel-lined pan. 
  7. Fry in batches, then serve hot.
