Jay Ducote’s Grilled Redfish on the half shell

Ingredients

  • 2 redfish filets, scales and skin on
  • Slap Ya Mama cajun seasoning
  • 2 Tbsp creole mustard
  • 4 cloves garlic, thinly sliced
  • 4 green onions, thinly sliced, divided
  • Slap Ya Mama garlic salt

Instructions

  1. Preheat the grill for direct cooking to 400F. 
  2. On each redfish filet, sprinkle with cajun seasoning. 
  3. Rub the filets with creole mustard then top it with garlic, half the green onions, and a sprinkle of garlic salt. 
  4. Place the filets scales down on the grill and cook until the fish is tender and flaky, keeping the skin side down the whole time. 
  5. Remove fish from the grill, top with the remaining green onion, and serve!
