Jay & Lynnae’s Herb Stuffed Whole Trout

Ingredients

  • 2 whole speckled trout, gutted and descaled
  • 2 Tbsp extra virgin olive oil
  • Slap Ya Mama cajun seasoning
  • 1 lemon, sliced into thin full moons
  • 2 Tbsp oregano, roughly chopped
  • 2 Tbsp basil, sliced
  • 2 Tbsp italian parsley, roughly chopped
  • 4 cloves garlic, minced

Instructions

  1. Preheat the grill for indirect cooking to 400F. 
  2. For each whole fish, rub 1 Tbsp olive oil through the inside cavity of the fish as well as on the skin. 
  3. Sprinkle Slap Ya Mama on the inside and outside of the fish. 
  4. Stuff the fish with lemon slices, fresh herbs, and garlic, then sprinkle more Slap Ya Mama on top of the herbs.
  5. Grill the whole fish all the way through, flipping only once if possible. 
  6. When the fish is flaking and the skin is crispy, remove the fish from the grill and serve whole.
