Lynnae’s Smoked Tasso Dip in Bayou Classic Cast Iron

Ingredients

  • 2 Tbsp olive oil
  • 1 cup yellow onion, diced
  • 1 cup red bell pepper, diced
  • ¼ cup green onion, sliced
  • 1 Tbsp garlic, minced
  • 1 cup tasso, chopped
  • 1 Tbsp thyme
  • 1 Tbsp oregano, chopped
  • 2 tsp Slap Ya Mama Cajun Seasoning
  • 1 Tbsp Slap Ya Mama Cajun Pepper Sauce
  • 3 lbs cream cheese, room temperature

Instructions

  1. Preheat a grill or smoker to 250F. In a 10” Bayou Classic cast iron skillet, heat olive oil on medium heat. 
  2. Saute onions until soft, then add bell pepper and saute. 
  3. Add green onion, garlic, and tasso and stir while sauteing. 
  4. Add thyme, oregano, cajun seasoning, and hot sauce and continue to stir until cooked. 
  5. Add the cream cheese to the skillet and fold it in to combine with all of the other ingredients. 
  6. Allow the cream cheese to melt and become one. 
  7. Spread the mixture out into an even layer and place the entire skillet in the smoker for 20 minutes or until lightly browned and bubbling. 
  8. Remove and serve right away with tortilla chips, corn chips, crackers, pork rinds, or anything else you can find!
