Shell Beach Pan Seared Speckled trout filets

Ingredients

  • 8 speckled trout filets
  • 1 Tbsp yellow mustard
  • 1 Tbsp Slap Ya Mama cajun pepper sauce
  • Slap Ya Mama cajun seasoning
  • 2 Tbsp olive oil
  • 1 Tbsp oregano, roughly chopped
  • 1 Tbsp basil, sliced
  • 1 Tbsp italian parsley, roughly chopped

Instructions

  1. Place fish filets in a dish and add the yellow mustard and hot sauce. 
  2. Stir to coat evenly. Season the fish with cajun seasoning. 
  3. In a Bayou Classic cast iron skillet over medium high heat, add the olive oil and heat until it simmers. 
  4. Cook the fish in the skillet, searing each side for a minute or two until browned and fully cooked through. 
  5. Remove the fish from the skillet and top it with the fresh herbs.
